Get cozy and bake a batch of plant-based brownies. With both coffee and cacao, these decadent treats are good any time of day or year. If looking for a gluten-free vegan option, sub in gluten-free all-purpose flour.

INGREDIENTS:

DIRECTIONS:

  1. Preheat oven to 350F. Prepare a square baking pan with parchment paper.

  2. In a medium bowl, pour your hot coffee over the chocolate chips. Let it sit for a minute and then mix. It should be melted through.

  3. In another medium bowl, combine the rest of your ingredients except the chocolate chips. Mix your chocolate mixture into the dry ingredients until well combined.

  4. Pour into your prepared pan and place into the oven for 40 minutes. Keep an eye on it if the sides start looking baked and hard. You don't want it to be overcooked.

  5. Remove it from the oven and let it sit for an hour to cool.

  6. Remove from the pan and let it sit for another hour on a cooling rack before cutting.
